Taste is that faculty which selects and relishes such combinations of ideas as produce genuine beauty, and rejects the contrary.

On the whole, it appears to me, that what is called taste, in its most general acceptation, is not a simple idea, but is partly made up of a perception of the primary pleasures of sense, of the secondary pleasures of the imagination, and of the conclusions of the reasoning faculty, concerning the various relations of these, and concerning the human passions, manners, and actions.

A taste is almost defined as a preference about which you do not argue — de gustibus non est disputandum. A taste about which you argue, with others or yourself, ceases ipso facto being a taste – it turns into a value.

Taste is one of the weaker words in our language. It means a little less than something, a little more than nothing; certainly it conveys no suggestion of potency. It savors of accomplishment, in the fashionable sense, not of power to accomplish in the creative sense. It expresses a familiarity with what is au courant among persons of so-called culture, of so-called good form. It is essentially a second-hand word, and can have no place in the working vocabulary of those who demand thought and action at first hand. To say that a thing is tasty or tasteful is, practically, to say nothing at all.

When judgement becomes sufficiently refined, we call it taste.

The word taste has different meanings, which it is easy to mistake. There is a difference between the taste which in certain objects has an attraction for us, and the taste that makes us understand and distinguish the qualities we judge by.

Its purpose is moral, that is, the evaluation of experience; in the deepest sense, the development of taste.

Genius creates, and taste preserves. Taste is the good sense of genius; without taste, genius is only sublime folly.

I think “taste” is a social concept and not an artistic one. I’m willing to show good taste, if I can, in somebody else’s living room, but our reading life is too short for a writer to be in any way polite. Since his words enter into another’s brain in silence and intimacy, he should be as honest and explicit as we are with ourselves.

Where does taste end and smell begin?

Some have a species of instinct (the source of which they are ignorant of), and decide all questions that come before them by its aid, and always decide rightly. These follow their taste more than their intelligence, because they do not permit their temper and self-love to prevail over their natural discernment. All they do is in harmony, all is in the same spirit. This harmony makes them decide correctly on matters, and form a correct estimate of their value. But speaking generally there are few who have a taste fixed and independent of that of their friends, they follow example and fashion which generally form the standard of taste.

Taste begins when appetite is satisfied.
